Chicken Alfredo Soup and World’s Easiest Biscuits ( Family Dinner Idea)

This warm, creamy chicken alfredo soup pairs perfectly with the easiest biscuits ever, which are made with only 4 ingredients. Your whole family will enjoy this cozy, comforting dinner and you’ll love that it takes under 30 minutes and under $10 to make!

Why You’ll Love This Chicken Alfredo Soup and Easiest Biscuit Recipe

Both of these menu items were inspired by items I got free with coupons! The fettucini noodles were a money maker at Publix this past week, and the biscuits are my favorite way to use up free mayonnaise that I get at Publix every few months. Believe it or not, my family refuses to eat mayonnaise in it’s natural state! So I have to come up with creative ways to use it anyway. And, just in case you are wondering, NO, you cannot taste the mayonnaise in these biscuits at all (if you could, my family would refuse to eat them!).

The soup is SO yummy, creamy, and filling. Best of all, it is so super easy! I adapted this recipe to make it even easier and faster (and less expensive too). It’s a nice change-up from regular ol’ chicken noodle soup, and it is easily done in less than 30 minutes.

The biscuits are literally THE easiest, fastest biscuits you will ever make. They only take four ingredients, and I can have them baking in the oven in about 5 minutes (plus, they completely skip the “cutting in the butter” step, which is just about my least favorite thing to do in the kitchen).

Easiest Ever Mayonnaise Biscuits

Ingredients for Chicken Alfredo Soup Recipe:*

2 1/2-3 cups chopped cooked chicken (Aldi – $2.49 for 1lb) — $2.49

3 Tablespoons butter (Aldi – $3.39 for 1lb)— $0.32

1 onion (Aldi – $2.86 for 4 lbs) — $0.30

9-oz fettucine (Publix – moneymaker with coupon) — free

3 cloves garlic (Aldi – $1.75 for 3-ct pkg) — $0.20

6 Tablespoons flour (Harris Teeter – $1.97 for 5lbs) — $0.04

6 chicken bouillon cubes + 6 cups water (Aldi – $1.79 for 25 cubes) — $0.46

1/4 teaspoon salt

pepper, to taste

1 teaspoon italian seasoning

2 additional cups water

1 16-oz bag frozen broccoli florets – (Publix) – $1.15

1/2 cup parmesan cheese (Aldi – $2.99 for 8oz) — $0.60

1 cup heavy whipping cream (Aldi – $4.99 for 32oz) — $0.62

1 tablespoon lemon juice – $0.15

Total for Chicken Alfredo Soup: $6.33 (Serves 6)

Ingredients for Biscuits Recipe:*

3 cups flour (Harris Teeter – $1.97 for 5lbs) — $0.30

3/4 cup mayonnaise (Publix – free with coupon) — free

1/2 teaspoon salt

2 teaspoons baking powder

1 1/2 cups milk (Aldi – $3.04 for 1 gallon) — $0.29

Total for Chicken Alfredo Soup: $0.59 (makes 18 biscuits)

Grand Total for Dinner: $6.92 (Serves 6 with leftover biscuits)

*I am listing the prices I got these items with coupons – if you follow my grocery posts, you can see how I used coupons and rebates to get these prices. Even if you don’t use coupons or shop at the same stores I shop at, you should still be able to make these recipes for $10 or less as I’ve allowed plenty of wiggle-room in the budget!

How to Make Chicken Alfredo Soup:

1. Melt 3 tablespoons butter in a large pot. Finely chop the onion and garlic cloves and saute in the butter until tender.

A pot on the stove holds chopped onions and garlic cloves.

2. Stir in the 6 tablespoons flour. Gradually whisk in the 6 cups chicken broth, 1 cup of heavy cream, 1 teaspoon salt, plus an additional 2 cups water and stir and heat over medium heat until thickened.

Creamy soup is being stirred in a stainless steel pot.

3. Add in the package of frozen broccoli and 9oz of fettucine and cook until tender (note: you will have to look at suggested boiling times on both the pasta and the broccoli packages and adjust when you put them in the pot depending on how long they are supposed to cook. The Buitoni brand of fettucini that I used only had to cook for 2 minutes, so I added it after the broccoli had already boiled for a couple of minutes).

4. Stir in the cooked chopped chicken, 1/2 cup parmesan cheese and 1 T lemon juice. Remove from heat. Add italian seasoning (or fresh parsley) and salt and pepper to taste.

How to Make Easiest Ever Mayonnaise Biscuits:

1. Follow the recipe here. I did the recipe exactly as written, but took all of the ingredients times 1 1/2 to make 18 biscuits.

Instructions to Make Easy Mayonnaise Biscuits:

Preheat the oven to 400 degrees.
Combine the dry ingredients in a medium bowl.
Add the mayonnaise and milk. Stir until it forms into a soft dough ball.
Turn out the dough onto a flour-dusted counter. (If the dough is sticky, you can add additional flour.)
Roll or pat out the dough until it is about 1/2 – 3/4″ thick. Cut the biscuits with a biscuit cutter or the edge of a drinking glass.
Place the biscuits about 1 inch apart on a baking sheet. Bake for 12 minutes.
