Looking for a hearty, budget-friendly meal that the whole family will love? This meat and potato crust quiche with fluffy flax muffins is delicious, filling, and easy on your wallet — it comes together for under $10!

This post is part of our $10 Dinner Ideas series, brought to you by Brigette on our team! Each week, she will be sharing easy, delicious, and affordable family-friendly dinner ideas that cost less than $10 to make, use everyday ingredients, and are super quick meals.

Why You’ll Love This Meat and Potato Crust Quiche with Flax Muffins

Now that eggs are coming down in price again (they were $1.99 per dozen at my Aldi this week – yay!), I’m ready to bring back all of the breakfast vibes at dinner time! Here’s another family favorite that feeds a crowd without breaking your budget. If you start with pre-cooked meat and use frozen hashbrowns, this quiche comes together so quickly! The ingredients are flexible, so feel free to mix up the cheeses and meats and even throw in some leftover cooked veggies if you have them.

The flax muffins are such a frugal, flexible recipe as well! I used this recipe for Easy Whole Wheat Muffins and subbed out ground flax seed for some of the whole wheat flour (the recipe is great as is, but I didn’t have any whole wheat flour and didn’t have the time to pull out my mill and grind berries). It makes almost two dozen, and my family loves the leftovers as snacks!

Ingredients laid out on a table for making meat quiche with potato crust and flax muffins, including eggs, shredded cheddar jack cheese, ground pork sausage, russet potatoes, milk, oil, flour, sugar, baking soda, baking powder, canned vegetables, spices, ground flax seeds, and jam.

Ingredients for Meat Quiche with a Potato Crust and Flax Muffins Dinner:

Meat and Potato Quiche Ingredients

6 cups shredded potatoes (Aldi – $3.25 for 10 lbs. You can also use frozen hash browns instead) — $0.60

6 Tablespoons vegetable oil (Aldi – $2.89 for 96 Tablespoons) – $0.18

1-lb sausage, or any other meat of choice (Aldi – $2.89 for 1 lb) – $2.89

2 cups milk (Aldi – $3.05 per gallon) – $0.38

1 8-oz. bag shredded cheese (Harris Teeter – $1.49 per bag) – $1.49

10 eggs (Aldi – $1.99 per dozen) – $1.69 (Yes, this is significantly more than the original recipe calls for)

1 teaspoon salt

1/4 teaspoon pepper

2 teaspoons parsley flakes or Italian seasoning, optional

Total for two quiches: $7.23 (serves 8-10)

Flax Muffin Ingredients:

2 1/2 cups flour (Harris Teeter – $1.97 for 5lbs) – $0.25

1/2 cup ground flax seeds (Aldi – $3.29 for 70 Tablespoons) – $0.38

3/4 cup sugar (Aldi – $2.86 for 9.5 cups) – $0.23

2 cups buttermilk* (Aldi – $3.05 per gallon) – $0.38

1 egg (Aldi – $1.99 per dozen) – $0.17

1 teaspoon baking soda

1/2 teaspoon salt

*I made my own buttermilk by adding 2 Tablespoons of vinegar to 2 cups milk and letting it sit for 5 minutes before using it in the recipe.

Total for Flax Muffins: $1.41 (Makes around 20 muffins)

Other Ingredients:

2 cans green beans (Aldi – $0.50 per can) – $1

Grand Total for Dinner: $9.64 (Serves 8 with leftovers!)

How to Make Meat & Potato Crust Quiche with Flax Muffins

1. Follow the instructions here to make Meat and Potato Quiche, following my doubled ingredient list for making two quiches.

Two glass pie dishes filled with raw shredded potatoes pressed into the shape of crusts, sitting on a dark granite countertop as the base for a potato crust quiche.
Ground pork sausage cooking in a skillet on a stovetop, being broken up with a meat chopper utensil as it browns.
Two potato crusts in glass pie dishes partially filled with cooked ground sausage.
Two glass pie dishes filled with shredded potato crust, cooked sausage, and a generous layer of shredded cheddar jack cheese, sitting next to a red mixing bowl of beaten eggs, ready to be assembled into meat quiche with potato crust.

2. Follow the instructions here for making the flax muffins, subbing 1/2 cup ground flaxseed + 2 1/2 cups flour for the 3 cups whole wheat/white flour that the recipe calls for (or make the recipe as is!). (I also have included the full recipes on the recipe card below.)

Mixing bowls with ingredients for flax muffins on a table.
Muffin tins filled with flax muffin batter sit on a dark table next to a red mixing bowl with a spoon, ready to be baked.

3. Heat the green beans or another vegetable of your choice.

4. Enjoy!

Instructions

Meat and Potato Quiche Instructions

Preheat oven to 425º.
Grease a 9-inch pie plate and set aside.
In a medium bowl, mix grated potatoes with oil and press evenly into a pie crust shape.
Bake this “crust” in preheated oven for 15 minutes, or just until beginning to brown.
Remove the crust from the oven and layer on the cheese and meat.
In a bowl, beat eggs, milk, salt, and pepper.
Pour this mixture on top of the other ingredients and sprinkle with parsley or Italian seasoning.
Bake for 30-45 minutes, or until knife inserted 1-inch from edge comes out clean.
Let cool for 5 minutes before cutting into wedges.

Flax Muffins Instructions

Preheat the oven to 350 degrees.
Beat the egg and sugar together.
In a separate bowl, mix the dry ingredients together.
Add the dry ingredients to the egg mixture, alternating with the buttermilk, until combined.
Put the batter in greased muffin tins and bake 15-20 minutes.

Green Beans Instructions

Drain the green beans and heat them in the microwave for 1-2 minutes, until warm throughout.

Notes

*I made my own buttermilk by adding 2 Tablespoons of vinegar to 2 cups milk and letting it sit for 5 minutes before using it in the recipe.

The flax muffins can be stored in a Ziploc bag at room temperature for 1-2 days (make sure they are completely cooled before putting them in the bags). If storing for longer than that, keep them in the refrigerator or freezer.
